Light and Healthy Pasta Salad

This is a very make-shift recipe (kind of a DIMS now that I think about it) for a pasta salad that Ben and I made with ingredients we love!  So, it's obvious that we love this pasta salad, but hopefully you all will too. It's very easy to make, it's healthy and doesn't have an overpowering taste like some pasta salads can have.

Here's what you need and what you need to do:

  • Cooked tri colored rotini pasta (we used half a 16 ounce box)
  • For the hearty and healthy ingredients, add as much as you want because it's veggies, veggies veggies!!!
    • chopped raw broccoli
    • diced raw carrots
    • diced cucumber
    • diced green pepper
    • spanish olives with pimientos
  • For the dressing, use as much as you want.  We went very light on the dressing because we wanted a fresh and light tasting salad.
    • lime infused olive oil
    • white balsamic viniagrette
    • a squirt of lime juice
    • whole black peppercorn, crushed (Add to taste)
    • sea salt (add to taste) 
    • thyme (add to taste)
  • MIX! and put in the fridge for several hours so it gets nice and cold...allowing flavors to blend nicely too
